February 7, 2022. Playa Royale, Nuevo Vallarta. Red Cabbage.

I use red cabbage in salads just to have another color in the salads. I use it both with mixed green salads and cole slaw. But last evening for dinner, Kenny cooked a delicious dish of red cabbage. Having never eated cooked red cabbage, I was looking forward to eating this warm red cabbage salad. It exceeded expectations. I loved it. Kenny found the recipe in "White Water Cook Book", pruduced by a west coast ski hill. By my standards, the recipe is complicated and includes pecans roasted in the oven, red cabbage sauteed in butter, cheese, bacon, red onions and radicchio, basil. Just before adding the dressing, you fold in the crumbled cheese. The dressing is made of olive oil and vinigar. The key is not to over cook the red cabbage according to Anne.. It was delicious. Along with the warm red cabbage salad, Kenny served sauges, split down the middle and grilled on the barbecue. Once again, we had just eaten a wonderful dinner but this time with a new dish, warm red cabbage salad.
