February 23, 2017. Playa Royale, Mexico. The Little Restaurant.

This year the little restaurant beside the road has a new structure.  Several years ago, Rosa opened a  taco restaurant.  They cost $1.  At the rear of the space was the kitchen, covered by a plastic tarp.  The diners sat under umbrellas.  After a couple of years, a permanent structure was built over the kitchen and a blue tarp was place over a frame covering the dining space.   This year a permanent structure with a thatched roof now covers the diners.  It looks strong and sturdy.  Clearly Rosa intends to stay.

At the beginning, the place was open for breakfast, lunch and dinner.  For the past two years she closed at 4:00.  No dinner.   The menu was limited but the food was wonderful and inexpensive.  We four ate there at least twice a week.  For the first time this year, we four ate lunch enjoying the new structure.

Rosa is always adding new ideas.  Now once a week, Rosa is teaching cooking.  From 5 to 7, for a fee, Rosa will teach a dish which you will cook,  then eat.  And they are open for dinner for only tacos and baked potatoes.   Rosa has also hired a cook.  She was pleased to see us and we returned the sentiment.  This busy little lady had done well with her little restaurant.  Every year is a bit better.  I love to see progress.  And even better, my fish lunch was delicious.  Hats off to Rosa.
