January 111, 2023. Playa Royale, Nuevo Vallarta. Dinner.

Every night since we have moved to our own place in Playa Royale Ken has prepared our dinner.    Our dinners have been wonderful.  I have enjoyed everyone.  For instance, tonight we ate chicken, but not an ordinary chicken breast but a special chicken that we only discovered a few years ago.  The butcher cuts the chicken breasts thin so cooking them is quick.  And the pieces are easy to cut and to eat.  Ken marinates the thin pieces  for a short time.  Then cooks them on the outside grill.  The chicken is delicious.

With the chicken we ate mushrooms cooked in butter, zucchini seasoned and sliced then cooked a bit, along with refried beans.  The combination was wonderful.  To top it off, we ate sitting on the balcony as the night sky descended.  It was a beautiful place to dine.  And a fine dinner to eat.  

We always wonder why this chicken is not sold in the Unites States.  It is so convenient.  If you cook too much chicken you can eat the left overs in a sandwich or salad.  But we are here and we enjoy eating this type of chicken.  Tonights dinner was superb.
