January 11, 2020. Playa Royale, Mexico.. Roast Pork.

Our dinners are always good, all prepared by Ken B. They are simple and succulent. But some nights they are extra special. Last evening was one of those nights. When we went to the Mega to shop for our groceries, I fell in love with the butcher so even though Ken was buying meat for dinners, I ended up buying a bunch of meat, which is now in the freezer. One of my purchases was a roast pork, a boneless pork loin, six pounds in weight. This was too big for three so Ken cut it into two pieces, keeping one and a half pounds for us. Last evening he cooked it for us. It was beyond delicious. First he marinated the meat for two hours. Then he cut up onions and carrots and placed them around the roast in a kind of basket of tin foil to keep in the juices. We ate our sunset food on the balcony enjoying the warm air and the setting sun. Ken realized that the vegetables were ready so we ate them as our first course which were tasty. Then we ate the meat all by itself. We all ate two pieces each. The meat was so tender and juicy that no one said a word. We just ate all that meat which was delicious. While we ate dinner on the balcony, a cruise ship left the harbor and we watched the lights head north. We three were pleased to be sitting on the balcony enjoying our delicious dinner rather than dining on the cruise ship. Our dinner on the ship would certainly not be better than our roast pork, cooked by Ken.
